Slow Cooker Recipes

Barley Pine Nut Casserole

 1 cup uncooked pearl barley
1 1/2 cups eight vegetable juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 medium stalks celery sliced
1 medium bell pepper chopped
1 medium onion chopped
1 14 1/2 ounce can ready to serve vegetable broth

Garlic to taste (I like LOTS)
Worcestershire
or tamari to taste
1 small jar of 3 Bean Salsa (or your favorite)
4 medium green onions sliced
1/4+ cup pine nuts toasted
Fresh tomato cubes

Optional - cooked ground turkey or Yves Veggie ground round (info) for protein and texture

Mix all ingredients except green onions, tomatoes and nuts in slow cooker. Cover and cook on low heat setting for 6-8 hours or until barley is tender.

Don't overcook! Stir in green onions, tomatoes and nuts.

Keith’s Crock Pot Beef Stew

1-2 pounds of stewing beef – sear first, if desired
Stock – beef, mushroom, chicken, vegetable

Vegetables
potatoes – baby are great, if available
carrots
onions
celery
mushrooms – small, whole
frozen corn – add at end
tomatoes or sauce
parsley – chopped
garlic – 2-4 cloves, chopped
Bay leaves – 3 or 4
Pepper, cayenne pepper – to taste
Salt – 1 tsp.
Worcestershire sauce – 4+ tsp.
Basil – 1+ tsp.
Thyme – 1+ tsp.
Sage – 1/8 – 1/4 tsp.
Brown sugar – 2 TBS.

 At end – add mixture of 2/3 cup broth and 1/3 cup rice flour and 1/3 cup potato flour to thicken

Cook 6 hours on high, 8 hours on low. If you like crispy vegetables, then add them later in the day, so they cook for about 4 hours.

Thai-style Pork Stew

Stew:
2 pounds boned pork loin, cut into 4 pieces
2 cups julienne-cut red bell pepper (I'm doing half pepper, half green beans)
1/4 cup teriyaki sauce
2 tablespoons rice or white wine vinegar
1 teaspoon crushed red pepper
2 garlic cloves, minced
1/4 cup creamy peanut butter

Remaining ingredients:
6 cups hot cooked brown rice
1/2 cup chopped green onions
2 tablespoons chopped, dry-roasted peanuts
8 lime wedges

1. To prepare stew, trim fat from pork; discard fat. Place pork, bell pepper, and next 4 ingredients in an electric slow cooker. Cover with lid, and cook on low-heat setting 8 hours. Remove pork from slow cooker, and coarsely chop. Add peanut butter to liquid in slow cooker; stir well. Stir in pork.

2. Combine stew and rice in a large bowl. Top each serving with onions and peanuts; serve with lime wedges.
